The course aims to provide an overview of Dairy science, technology and the requirements of the Dairy Products Regulations. The course will help delegates to:

  • Understand the chemical composition and microbiology of milk.
  • Appreciate the principles of dairy products manufacture.
  • Identify hazards associated with processing equipment and methods.
  • Appreciate the critical control points associated with Dairy Products Manufacture.
  • Recognise suitable control, monitoring and verification strategies.
  • Undertake Food safety inspections of large and on-farm Dairies.
